5 Step Zesty Chicken Recipe

Holy cow you guys, this recipe was one of those happy accidents where I had a touch of this and a handful of that and after throwing it all in the slow cooker... magic. This chicken dish is packed with flavor and zest, and is fantastic served over brown rice with a side of lemon roasted cauliflower!

Ingredients (forgive the guesstimates on the amounts, I eyeballed a lot with this recipe!)

  • 2-3 organic, boneless, skinless chicken breasts
  • 1 cup chicken bone broth
  • juice of 2 large lemons
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1/2 tsp salt
  • 14 oz can artichoke hearts (chopped)
  • 14 oz can hearts of palm (chopped)
  • 1 tbsp arrowroot powder
  • salt and pepper to taste

1. Combine all ingredients (except arrowroot, salt and pepper) in a slow cooker.

2. Mix so all ingredients are well combined.

3. Pick your slow cooker setting. The longer you can leave it in the more tender the chicken will be, but I was in a rush so I just set it to 4 hours.

4. In the last 30 minutes of cooking add the arrowroot powder to thicken it up a bit.

5. When it's all done, I like to shred the chicken up with a fork so it really soaks up all the flavors of the broth.

Finally, when you're ready to serve add salt and pepper and serve it with your favorite grain and veggies!
